Southwestern Porterhouse with Spicy ButterSouthwestern Porterhouse with Spicy Butter

Ingredients

1 Angus Farms porterhouse steak (2 1/2 pounds, 1 1/2 inches thick), room temperature
1/2 cup (1 stick) unsalted butter, softened
1 fresh jalapeno pepper, seeded and finely chopped
1 garlic clove, minced
Kosher salt and cracked pepper

Instructions

1. Preheat grill to medium-high. (If you are using a charcoal grill, coals are ready when you can hold your hand 5 inches above grill for just 3 to 4 seconds.) Stir butter, jalapeño and garlic in a bowl, and set aside.
2. Season both sides of steak with salt and pepper. Grill over hotter part of grill, covered, for 3 to 4 minutes per side. Move steak to cooler part of grill. Grill, covered, 7 to 8 minutes on each side or until a meat thermometer registers an internal temperature of 145°F for medium-rare doneness.
3. Remove from grill, and let rest 10 minutes. Serve with jalapeño butter.
