Directions
Preheat oven to 350°F. Lightly rub the roast with salt and pepper and set aside. Pour the olive oil into a medium-sized braising pan or a large sauté pan overmedium-high heat on the stove top. When the oil begins to smoke, add the seasoned roast and brown evenly on all sides. Once the roast is browned, turn off the stove top and remove the roast from the pan. Place the sliced onions in an even layer in the pan, and place the browned roast directly on top of the onions. Place the roast and onions in the preheated oven. Cook to the desired degreeof doneness (approx. 1 hour for medium). Remove the roast to a clean plate, lightly cover with foil, and let rest for about 30 minutes before slicing. Remove onions to a separate container. Serve with your favorite side dishes and enjoy!

TO BUILD PANINI: Lightly butter two slices of bread. Slice the roast very thin. On the non-buttered side of one piece, layer in the following order: Swiss cheese, horseradish spread, sliced meat, onions, sliced meat, horseradish spread,Swiss cheese. Place the other non-buttered side of the second slice of bread on top so that the buttered side of both pieces of bread are on the exterior of the sandwich. Place the sandwich in a skillet over medium heat and lightly press until one side is browned. Flip the sandwich and press until the second side is browned.Serving suggestions: crispy potato chips and gourmet pickles.
