The USDA grades beef for quality. The age of the animal and the amount of
marbling, the flecks of fat in the lean meat, are the primary standards for beef
grading. These factors largely determine the beef’s tenderness, juiciness and

and limited supply. Of that limited supply, only the top 20% of all Angus beef
is good enough to be called Angus Farms premium beef. So when you choose
